Respect for the natural world and ways we can improve our ecological footprint have always been the basis for the cooking and eating at Petersham Nurseries Café. We are purveyors of organic farming, maintaining quality and chemical-free ways of growing in our kitchen garden and at our family farm in Devon, where much of our produce comes from. We seek to eliminate waste across all levels and have employed diverse ways to tackle this in recent years. This approach is integral to our operations at Petersham Nurseries Café: we are inspired by nature and its protection is a chief aim in all we do.

Food

Our menus are based on a slow food ethos, sticking firmly to seasonal vegetables and fruits, with as few food miles as possible. Haye Farm, in Devon – run by the son of our founders – supplies us with meat, eggs and produce all through the year, so we are sure of the quality of our inputs. Soil Association assured, they have also achieved the highest pig welfare score by Farms Not Factories, and are committed to creating a circular, no-waste system on their farm. They employ agro-forestry and regenerative methods of farming, using waste from one corner of the farm as fuel in another, and keeping the cycle closed.

Waste

We recycle nearly all our waste and utilise every ounce of produce possible in our kitchens, with as little food waste as possible. We introduced an aerobic food digester last year, which odourlessly turns food waste into water, removing the need for waste bins and achieving a substantial reduction in our carbon footprint. In early 2017 we took to separating our coffee waste and sending it to Bio-Bean, who turn it into biofuels.

Sourcing

Ethical, environmental sourcing is another key element in pursuing sustainable goals. Everything from our chef jackets to our cling film has been rethought in an eco-friendly way, to minimise our impact on the planet in every vein of the business. The kitchen uses greaseproof paper made from sustainable forest paper, 100% compostable and recyclable as well as swapping cling film for renewable, compostable bio- film, and their jackets are made from recycled bottles.

All these components come together at Petersham Nurseries Café, in this truly special restaurant that is devoted to seasonal eating and being immersed in nature. We look forward to seeing you soon.
