During this hands-on workshop Avinash will demonstrate traditional Indian cooking techniques and lead an exciting cookery lesson before you sit down and enjoy the fruits of your efforts. Cooking good Indian food isn’t complicated and this workshop sets out to show just that.
Born and raised in India, Avinash moved to the UK nearly 15 years ago. He has worked at several prominent restaurants including the 2 Michelin starred Hibiscus in Ludlow and The River Cafe in London, where he worked for 10 years until Summer 2018. After years of cooking seasonal Italian food, he is now re-visiting food from his roots in Southern India.
Sourcing seasonal produce and demonstrating traditional Indian cooking techniques, Avinash has design menu set to evoke your tastebuds. During the workshop you will be cooking: onion and pumpkin pakoda, rasam with yellow lentils, spicy lentil broth, salad of raw fennel, cucumber and raw mung beans with fresh coconut and lime, braised cabbage with mustard seeds, green chilli and curry leaves, sagu with potato, carrots, cauliflower, coconut, cinnamon and coriander, creating poori or chapati from scratch and warm Carrot halwa.
