Pancakes with Bacon and Maple Syrup

Just in time for Shrove Tuesday, try this delicious pancake recipe from La Goccia.

Ingredients
140g
Gluten free flour, sifted
170ml
Whole milk
1
Haye Farm egg, beaten
200g
Smoked, streaky bacon
A drizzle
Maple syrup
Preparation
1.
Pre-heat the oven to 160 degrees Celsius.
2.
Whisk the sifted flour with the eggs until smooth, then add the milk to form a batter.
3.
Line a baking tray with greas e proof paper, arrange the slices of bacon in a single layer, cover with another sheet of paper and top with a matchin g sized baking tray. Place in the oven for 20 - 25 minutes until golden and crispy.
4.
For the pancakes , heat a tablespoon of olive oil in a non-stick pan over a medium heat.
5.
Using a spoon or ladle add small amounts of pancake batter to form the pancakes. Once you start to see small bubbles appear on the surface the pancakes are ready to be turned . Once turned the pancakes shouldn’t take longer than a minute to be ready.
6.
Repeat this process until all the batter is used up , wiping the pan between cooking to avoid any burnt oil/batter.
7.
Remove the pancakes from the pan and place on a plate. Layer the bacon between each layer of pancake and serve with maple syrup.
