Hummus with Cumin

Enjoy this creamy hummus with an assortment of seasonal vegetables. In La Goccia, we currently serve this dish with fine purple and green beans, fennel, kohlrabi, courgette and mixed baby carrots from Haye Farm.

Ingredients
8g
Cumin
1 clove
Garlic
1kg
Maremma Organic Chickpeas (sold in the Delicatessen, Covent Garden)
150ml
Olive Oil
1
Lemon
20g
Maldon sea salt
Preparation

Infuse the cumin in the olive oil with the garlic until the garlic has softened.

Blitz the cumin and oil then add the rest of ingredients and blitz until smooth.

Season to taste.
