“This dish is great for sharing as a starter or as a main for a light summer lunch. Nasturtium leaves and flowers have a peppery taste and their mix of colours give the dish a great look”

A BIT ABOUT AMBRA
She’s the head chef of Petersham Nurseries Café, near the Thames in leafy southwest London, but she grew up in Empoli, Tuscany, where her parents ran two restaurants. After graduating from catering school, Ambra moved to London and worked at Hix Soho before joining Petersham Nurseries. Renowned for serving seasonal ingredients with Italian flair, the restaurant was awarded a green Michelin star in 2021 for its commitment to sustainability. It sources most of its ingredients from the kitchen garden as well as its own organic farm in Devon.
