In the kitchens of La Macchia, ethics and fair produce remain at the heart of what we do. In line with Italy’s ‘Kilometre Zero’ philosophy, the restaurant advocates minimal transportation from the farm to the kitchen. Executive Chef Lorenzo Maria Gagliardi works with the finest local producers, including cheese makers and fishermen, while also sourcing vegetables and edible flowers from a local farm that provides opportunity to people with learning difficulties and disabilities.
The menu is a testament to Petersham Nurseries’ dedication to using organic produce and ingredients from the Tuscan region – signature Anchovies and Sage, Carpaccio of line-caught fish, which changes daily based on fisherman’s catch, our Chef’s signature dish Paccheri with Scorfono, and a classic linguine with clams and bottarga from the nearby Orbetello lagoon.
