Domaine Parusso Dinner at The Petersham
On Wednesday 26th January, winemaker Domaine Parusso from Parusso in Piedmont, northern Italy, will arrive at The Petersham Covent Garden for the very first winemaker dinner of the series. Here, he will open bottles from his family-owned, biodynamic vineyards where he grows Barolo and Nebbiolo, and talk guests through the different tasting notes for each terroir-driven wine. His picks from his own cellars include an earthy Barolo 2018, a savoury Mosconi 2018, Bussia 2018, single-vineyard Barolo Mariondino 2018, Bussia Riserva Oro 2000, and Bussia Riserva Vigna Rocche 2013 - all of which will be paired with different courses from The Petersham’s kitchen.
The menu, reflecting Petersham Nurseries’ slow food philosophy, begins with appetisers of Haye Farm beetroot with ricotta and chamomile, or beef tartare with girolles, quail egg and Cashel Blue. Next, a choice of primi plates focuses on the finest seasonal produce: there’s duck plin with wild mushroom, fennel, and porcini broth, and slow cooked egg yolk with potatoes and mushrooms. For the main event, Italian flavours come to the fore in dishes such as braised ox cheek with Chianti Classico, purée di patate and Zisola olive oil, or onion squash with puntarelle, black olives, chilli, and lentils.
